New Quick Soup
I sauted some sliced leek in a little olive oil then sliced in some button mushrooms. I then diced up a yam and threw that into the pot with about 2 cups of chicken broth though you could easily use vegetable broth. I looked for white wine but didn't have any. As soon as the yams were soft, I poured the soup into a generous sized bowl and garnished with chopped fresh parsley and crumbled a little kefalotiri (any kind of parmesean would work too) cheese on top. Salted. Peppered and ate with delight.
