Part of this school project is being super proactive and trying to take better care of myself. One, I'm actually eating breakfast before I leave the house. Two, I'm actually packing a lunch. I'm now on a schedule where I'm eating twice, yes twice, by the time I would normally have just gotten around to eating. My fellow class mates are increasingly interested in what's in my lunch. Today, a number of them asked me for the 'recipe.' Huh? *laugh* It's funny, because of course there are certain ingredients in certain quantities but there isn't really a recipe so much. However, I am going to post it up for them anyway. The one thing I did which I think sort of made the meal was adding a couple of spoonfuls of ''veggie butter." So, here is what I did to create the veggie butter:
I took a small can of tomato paste and mixed it with about the same amount of softened butter. I also added a tablespoon or two of pesto, a glug of tamari, and a couple of tablespoons of nutritional yeast. I also added some rainbow pepper. Anyone making this would want to experiment with amounts, working out their own preferences.
So today, my lunch was: about a 1/2 cup brown rice, 1/2 cup chick peas, 2 spoons of veggie butter, a sliced carrot, red pepper, green onion, 1/4 cup purple cabbage. I topped the veggies with about an ounce of goat feta. I also added a teaspoon of some of the hot peppers I canned this summer--you won't have those but you could use anything you like to add a little spice. I think I also added another tablespoon or two of nutritional yeast but I can quite remember.
